First of all, be prepared to wait until next year for those machines, business notebook refresh cycle is rather slow compared to consumer ones.
Second, Apple computers aren't business machines, they are prosumer at best (and that's giving them more credit than they actually deserve).
Which means... that limits you to the Kaby Lake refresh, aka the successors of the T460s, X1 Carbon, Latitude E5470 and E7470.
Not sure what you meant by i7 or better, they're all ULV or mobile processors. If you want "better", which I'm assuming is a Xeon, then you'd have to pay the price in size or weight.
512GB PCIe SSD, 16GB RAM, TPM, FPR, matte IPS FHD and above are all current market products, get your checkbook ready, cause that kind of configuration is going to cost you without a fleet discount.
Also, don't underestimate HP, they have very solid business offerings, albeit at a higher price than everybody else.
Security wise, if someone wants to steal from you, they'll manage to do it somehow. Security is 90% vigilance and 10% hardware, as there is no such thing as absolute security.
